Usually, pequins are dried, and also the thin-fleshy berries dry quite well. Then they have an aromatic, slightly smoky taste besides fire (up to 100,000 scoville units). They are crumbled over pizza, and otherwise they are easily pounded wherever otherwise normal "Red Pepper Flakes" would be taken - only more tasty and fiery.
Pequin (also called Piquin) is the elongated cultivation form of wild Chiltepins. The bushy plants are about 60 to 75 cm high and carry innumerable 15 to 20 mm long pods with a diameter of about 5 to 8 mm. The upright growth of the fruits and the small leaves still show the proximity to the wild form.
