Papayas contain papain, an enzyme, which acts as a natural meat tenderiser. Curry emerged from India in 4000 BC under name Hindu name Garam Masala, which means `hot, spicy blend`. In the spice business, this blend appears in 15 to 20 herbs for West Indian, African and Asian cuisine. We reckon this sauce will suit just about any dish, especially salads and seafood.
